What is behind this production step?

Versatile oils with a special taste

The virgin oils from BIO PLANÈTE are cold-pressed once and contain a variety of beneficial ingredients, such as polyunsaturated omega-3 fatty acid. However, they cannot withstand the high temperatures that occur during frying and baking. In the worst case, if the oil is heated too much, the so-called smoke point is exceeded and the oil starts to decompose. This not only produces unpleasant smoke, but also substances that are harmful to health.

This is why we have developed oils with special seeds and technologies which can be heated to high temperatures and are wonderful for frying and baking. This is also indicated by small icons on the labels of the oils, as well as by the legally prescribed reference “refined”.

Basically, a distinction is made between physical and chemical refining:

Refining makes our oils resistant to high temperatures

In order to make our oils resistant to high temperatures, the raw materials from organic farming go through various refining steps. All process steps for our oils are in accordance with the regulations for organic products.

The three steps of physical refining used for our oils are called degumming, bleaching and deodorisation. In concrete terms, citric acid and bleaching earth are added to the uniquely cold-pressed oil during degumming and bleaching, which is then filtered through activated carbon and mechanical filters. This removes colouring and slimy substances, and the oil becomes clear and transparent. During the subsequent deodorisation process, sensitive, volatile substances in particular are removed with hot steam and under vacuum, so that the smoke point and thus the heat resistance of the oils increase and the shelf life is extended.

The physical process is technically more complex, but requires fewer process steps. The main advantage is the lower environmental impact. Physical refining, for example, produces almost no waste water.

In chemical refining, which is not used for our oils, two further process steps are added: delecithinisation and neutralisation. During delecithination, the lecithin is removed from the oil. Lecithin is an emulsifier that has no influence on the quality of the oil and can be used for other purposes. Caustic soda is used for deacidification. This binds the free fatty acids and is then washed out again. The shelf life of the oil is thus extended. The caustic soda or sodium hydroxide is completely removed from the oil in this process and disposed of properly. There is no health risk when consuming the oil.

Our “refined” oils

Shea Butter 

Our BIO PLANÈTE Shea Butter is a real all-rounder. However, the actual taste of Shea Butter is perceived as unusual and rather unpleasant in Europe. On the one hand, this is due to the typical flavour of shea nuts, and on the other hand this is due to the smoky aromas that result from the traditional processing of the nuts in the countries of origin over an open fire. Through the various steps of physical refining, the Shea Butter becomes heat-resistant as well as neutral in smell and taste. It is therefore not only suitable as a baking and frying fat, but also purely for making spreads.

Coconut Oil Refined

BIO PLANÈTE Coconut Oil Refined is our tasteless alternative to Virgin Coconut Oil. Due to the physical refinement, it is versatile as a vegan butter substitute as well as for frying, baking and deep-frying. Another advantage is the long durability. 

Cooking & Frying Oil

BIO PLANÈTE Cooking & Frying Oil is a very versatile oil due to its production. It is ideal for frying, baking and deep-frying. In addition, we use very special sunflower seeds for the Cooking & Frying Oil, so-called high oleic sunflower seeds. These are rich in vitamin E, particularly heat-resistant and can withstand temperatures of up to 210 degrees Celsius.   

Cooking & Frying Oil with Ghee

If you like a buttery touch, BIO PLANÈTE Cooking & Frying Oil with Ghee is a good choice for baking and frying. We have combined the ghee, also called clarified butter, with oleic acid-rich, physically refined sunflower oil. This makes the oil highly heatable, rich in monounsaturated fatty acids as well as vitamin E.

Oil Mixture for Wok dishes

Oleic acid-rich, physically refined sunflower oil is the basis for our BIO PLANÈTE Oil Mixture for Wok dishes. It can be heated to high temperatures and is ideal for frying in pans and woks. Chilli and finely roasted peanut oil also give the Oil Mixture for Wok dishes an Asian flavour.

Flaxseed Oil Mixture Omega Red

 

The fruity note makes our BIO PLANÈTE Flaxseed Oil Mixture Omega Red very special. However, the inherent flavour of the virgin sunflower oil would overpower the fine combination of ground strawberries, mangoes and acerola cherries, as well as mild linseed oil and slightly acidic oil from sea buckthorn pulp. That is why we use oleic acid-rich, physically refined, neutral-tasting sunflower oil here.

This has the further advantage that the balance of the fatty acids omega-6 to omega-3 in the Flaxseed Oil Mixture Omega Red is optimised by the oleic acid-rich sunflower oil. It has fewer omega-6 fatty acids than so-called lin oleic sunflower oil. Our daily diet provides omega-6 fatty acids in a ratio of about 15:1 to omega-3 fatty acids. The German Nutritional Association recommends a ratio of 5:1. With our BIO PLANÈTE Flaxseed Oil Mixture Omega Red, which has an omega-6 to omega-3 ratio of 1:3, the omega ratio can therefore be balanced, so to speak.

The Flaxseed Oil Mixture Omega Red from BIO PLANÈTE must not be heated due to the combination of partly sensitive ingredients such as Flaxseed Oil.

Flaxseed Oil Mixture Omega Blue

The vegan BIO PLANÈTE Flaxseed Oil Mixture Omega Blue contains a valuable ingredient from the sea: the polyunsaturated fatty acid DHA from algae oil. However, the oil from the microalgae Schizochytrium tastes fishy if untreated and would completely overpower the mild taste of Flaxseed Oil in combination with roasted walnut oil, sunflower oil and wheat germ oil. That is why we use physically refined, tasteless algae oil for our Flaxseed Oil Mixture Omega Blue. At the same time, the additional production steps ensure a better shelf life of the mixture.

The Flaxseed Oil Mixtures from BIO PLANÈTE must not be heated due to the combination of partly sensitive ingredients, such as Flaxseed Oil.
